Method

Preparation of Vegetables

  1. 1

    Chop the Vegetables

Start by washing and chopping the bell pepper, onion, zucchini, and mushrooms into small, bite-sized pieces. Make sure to remove the seeds from the bell pepper.

  2. 2

    Prepare the Spinach

Rinse the spinach under cold water and shake off excess moisture. If the leaves are large, consider chopping them into smaller pieces.

Cooking the Filling

  1. 3

    Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 3 minutes until they start to soften.

  2. 4

    Add Zucchini and Mushrooms

Stir in the zucchini and mushrooms, cooking for an additional 3-4 minutes until they are tender.

  3. 5

    Add Spinach and Seasoning

Add the spinach to the pan, and cook until wilted, about 2-3 minutes. Season the mixture with salt and black pepper, stirring well to combine.

Assembling the Quesadilla

  1. 6

    Prepare the Tortilla

On a clean surface, lay out a tortilla and sprinkle 1/2 cup of shredded cheese evenly over one half of the tortilla.

  2. 7

    Add Vegetable Filling

Spoon a portion of the sautéed vegetable mixture over the cheese on the tortilla, then top with another 1/2 cup of shredded cheese.

  3. 8

    Fold and Repeat

Fold the tortilla in half to cover the filling. Repeat this process with the remaining tortillas and filling.

Cooking the Quesadillas

  1. 9

    Cook the Quesadilla

In the same skillet, add another tablespoon of olive oil over medium heat. Place the folded quesadilla into the skillet and cook for about 3-4 minutes on each side until golden brown and the cheese is melted.

  2. 10

    Remove and Slice

Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges.

Serving

  1. 11

    Serve with Dips

Serve the veggie quesadillas warm, with salsa or guacamole on the side for dipping.
