Marinating the Proteins

In a bowl, combine beef strips, chicken slices, or shrimp with olive oil, garlic powder, cumin, chili powder, salt, and black pepper. Mix well and let marinate for at least 30 minutes.

Prepare the Vegetables

While the proteins are marinating, slice the poblano peppers, onion, and bell pepper into strips.

Grilling the Proteins

Heat a grill or skillet over medium-high heat. Add the marinated proteins and grill for about 5-7 minutes, or until fully cooked and slightly charred. Remove from the heat and set aside.

Grilling the Vegetables

In the same skillet or on the grill, add sliced poblano peppers, onion, and bell pepper. Grill for about 5 minutes, stirring occasionally, until they are tender and slightly charred.

Combining Ingredients

Return the grilled proteins to the skillet with the vegetables. Mix everything together and pour the ranchero sauce over the top. Stir to combine and heat through for an additional 2-3 minutes.

Adding the Cheese

Sprinkle shredded cheddar and Monterey Jack cheese over the top. Cover the skillet and let the cheese melt for about 2-3 minutes.

Once the cheese is melted and bubbly, remove from the heat. Serve the Fajitas Jalisco Cheese hot, garnished with fresh cilantro if desired.
