Tacos
- 1
Cook the Beef
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a spatula.

Add Seasoning
Once the beef is browned, drain excess grease and add taco seasoning. Stir well and cook for an additional 2-3 minutes.
- 3
Prepare Tortillas
In a separate pan, warm the corn tortillas for about 30 seconds on each side until pliable.
- 4
Assemble Tacos
Place a portion of the seasoned beef in each tortilla, then top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
Enchiladas

Assemble Enchiladas
Take a corn tortilla, place a portion of the chicken filling in the center, and roll it up tightly. Repeat with the remaining tortillas.
- 7
Add Sauce
In a baking dish, spread a thin layer of enchilada sauce. Place the rolled enchiladas seam-side down in the dish. Pour the remaining enchilada sauce over the top.
- 8
Top with Cheese
Sprinkle shredded cheese evenly over the enchiladas.
- 9
Bake
Preheat the oven to 180°C (350°F). Bake the enchiladas in the oven for 20 minutes, or until the cheese is melted and bubbly.
