Preparation

  1. 1

    Marinate the Steak

In a bowl, whisk together the olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the flank steak to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

  2. 2

    Prepare Vegetables

While the steak is marinating, slice the bell peppers and onion into thin strips. Set aside.

Cooking

  1. 3

    Cook the Steak

Heat a grill or skillet over medium-high heat. Remove the steak from the marinade, allowing excess marinade to drip off. Grill the steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

  2. 4

    Sauté the Vegetables

In the same skillet (or a separate one), add a bit of olive oil if needed and sauté the sliced bell peppers and onion over medium heat for about 5-7 minutes, until they are soft and slightly caramelized.

Assembly

  1. 5

    Assemble Fajitas

Slice the rested steak against the grain into thin strips. In a large serving platter or individual plates, layer the sliced steak, sautéed vegetables, and serve with flour tortillas, sour cream, guacamole, and salsa on the side.
