Burrito

Rice and Beans

Method

Burrito

  1. 1

    Cook the Chicken

In a skillet, heat 1 tbs of olive oil over medium heat. Season the chicken breast with salt and pepper. Cook for 6-7 minutes on each side until the chicken is fully cooked through and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing it into thin strips.

  2. 2

    Prepare the Tortillas

Warm the burrito tortillas in a microwave for 15-20 seconds or on a skillet for about 30 seconds on each side to make them pliable.

  3. 3

    Assemble the Burritos

On each tortilla, layer the sliced chicken, cheddar cheese, sour cream, salsa, and lettuce. Roll the tortilla tightly around the filling to form a burrito.

Rice and Beans

  1. 4

    Cook the Rice

In a medium saucepan, combine 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low and cover. Simmer for about 18-20 minutes or until the rice is tender and the water is absorbed.

  2. 5

    Prepare the Beans

In a separate pot, heat the canned black beans over medium heat. Stir in garlic powder and cumin. Cook for about 5-7 minutes until heated through. Stir in chopped cilantro before serving.

  3. 6

    Serve with Lime

Cut the lime into wedges and serve alongside the rice and beans for added flavor.
