Taco Preparation

    Cook the Beef

    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

    Add Seasoning

    Add taco seasoning to the cooked beef and stir well. Follow package instructions for water and simmer for about 5 minutes.

    Assemble the Taco

    In each taco shell, add a portion of the beef mixture, followed by shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.

Enchilada Preparation

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Fill the Tortillas

    Take a corn tortilla, spread refried beans on it, add shredded chicken, and a tablespoon of enchilada sauce. Roll it up tightly.

    Place in Baking Dish

    Place the rolled enchiladas seam-side down in a baking dish. Repeat for remaining tortillas.

    Top with Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with shredded cheese.

    Bake

    Bake in the preheated oven for about 20 minutes, or until hot and cheese is melted.

Rice or Beans Preparation

    Prepare Rice or Beans

    You can either heat the cooked rice in a microwave or on a stovetop, or heat the black beans in a saucepan until warm.
