Chicken Preparation

Marinate the Chicken

In a bowl, combine olive oil, salt, and black pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.

Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken breasts for 6-7 minutes on each side or until fully cooked (internal temperature of 165°F). Remove from grill and let rest.

Grill the Vegetables

On the same grill, add sliced onions, tomatoes, and mushrooms. Grill for about 4-5 minutes until they are tender and slightly charred. Set aside.

Assembly and Serving

Prepare Rice

In a saucepan, combine the white rice and water. Bring to a boil, then reduce to low heat, cover, and cook for 15-20 minutes or until the rice is fluffy and water is absorbed.

Prepare Beans

In a small saucepan, heat the drained black beans over medium heat. Add cumin, garlic powder, and salt. Stir and cook until heated through, about 5 minutes.

Top the Chicken

Place the grilled chicken on a plate. Top each piece with grilled onions, tomatoes, and mushrooms. Pour cheese sauce over the top.

Serve
