Preparation of the Enchiladas

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Filling
In a mixing bowl, combine the shredded cooked chicken, chopped onion, and 1 cup of shredded cheese. Mix well to combine.

Assemble the Enchiladas
Take a corn tortilla, place a generous amount of the chicken filling in the center, and roll it up tightly. Repeat for all tortillas.

Arrange in Baking Dish
Spread 1 cup of enchilada sauce at the bottom of a 9x13 inch baking dish. Place the rolled enchiladas seam side down in the dish.

Add Sauce and Cheese
Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle the remaining 1 cup of shredded cheese evenly over the top.

Prepare Toppings
While the enchiladas bake, prepare the toppings. Chop fresh cilantro and set aside.

Serve with Sides
Once the enchiladas are done, serve them hot topped with sour cream and chopped cilantro. Serve alongside cooked white rice and refried beans.
