Prepare the Enchiladas

Sauté the Spinach Mixture
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

Add Spinach and Cream Cheese
Add fresh spinach to the skillet and cook until wilted, about 2 minutes. Stir in cream cheese, salt, and black pepper until fully combined and creamy.

Prepare the Cheese Sauce

Add Milk and Cheese
Gradually whisk in milk, cooking until the sauce thickens. Stir in cheddar cheese, Monterey Jack cheese, chili powder, cumin, and salt until melted and smooth.

Pour Sauce Over Enchiladas
Once the cheese sauce is ready, pour it evenly over the enchiladas in the baking dish.
Bake the Enchiladas

Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes until bubbly and heated through.
Prepare the Rice and Beans

Serve
While the enchiladas are baking, prepare the cooked rice and refried beans according to package instructions. Once everything is ready, serve the enchiladas with rice and beans on the side.
