Grilled Chicken

Prepare the Chicken
Season the chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper. Make sure the chicken is evenly coated with the seasonings.

Grill the Chicken
Preheat the grill to medium-high heat. Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before slicing.
Rice

Cook the Rice
In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of long-grain rice and 0.5 tsp of salt. Stir, cover, and reduce the heat to low. Cook for about 18-20 minutes or until the water is absorbed and the rice is tender. Remove from heat and stir in 1 tbsp of butter.
Cheese Sauce

Make the Cheese Sauce
In a saucepan over medium heat, melt 2 tablespoons of butter. Whisk in 2 tablespoons of all-purpose flour and cook for 1-2 minutes until golden brown. Gradually whisk in 1 cup of milk until smooth. Continue to cook, stirring frequently, until the sauce thickens (about 5 minutes). Remove from heat and stir in 1 cup of shredded cheddar cheese, 0.5 tsp of salt, 0.25 tsp of black pepper, and 0.5 tsp of garlic powder until the cheese is melted and the sauce is smooth.

Assemble the Dish
On a plate, create a bed of the cooked rice. Slice the grilled chicken and place it on top of the rice. Drizzle the cheese sauce generously over the chicken and serve hot.
