    Fry the Eggs

    In a skillet, heat the olive oil over medium heat. Crack the eggs into the skillet, being careful not to break the yolks. Fry the eggs until the whites are set and the yolks are still runny, about 3-4 minutes. Season with salt and black pepper.

Ranchero Sauce

    Prepare the Ranchero Sauce

    In a saucepan over medium heat, add a bit of olive oil. Sauté the chopped onion and minced garlic until translucent, about 3-4 minutes. Add the chopped jalapeño and cook for another 2 minutes. Stir in the canned diced tomatoes, cumin, lime juice, salt, and pepper. Simmer for 10-15 minutes until the sauce thickens slightly. Stir in the chopped cilantro just before serving.

Rice and Beans

    Heat the Rice and Beans

    In a small saucepan, combine the cooked white rice and black beans. Add cumin and salt, and gently heat over low heat until warmed through, about 5-7 minutes.

Assembly

    Assemble the Dish

    On a plate, place a serving of the rice and beans. Top with the fried eggs and generously spoon the ranchero sauce over the top. Garnish with additional cilantro if desired.
