Burrito Filling

Rice and Beans

Method

Burrito Filling

  1. 1

    Cook the Meat

In a large skillet, heat the olive oil over medium heat. Add the ground beef or shredded chicken and cook until browned (about 5-7 minutes for beef, 3-5 minutes for chicken). Drain excess fat if necessary.

  2. 2

    Add Seasoning

Sprinkle the taco seasoning over the cooked meat and stir well. Add a splash of water if needed to help distribute the seasoning. Cook for an additional 2-3 minutes until everything is well combined and heated through.

Rice and Beans

  1. 3

    Cook the Rice

In a medium saucepan, combine the white rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked and water is absorbed.

  2. 4

    Heat the Beans

While the rice is cooking, open the can of black beans and drain. Rinse them under cold water if desired. In a small saucepan, heat the beans over medium heat until warmed through (about 5-7 minutes).

Burrito Assembly

  1. 5

    Assemble the Burrito

Lay a large flour tortilla flat on a clean surface. In the center, layer some of the meat mixture, followed by a scoop of cooked rice, black beans, shredded cheese, sour cream, salsa, lettuce, and diced tomatoes.

  2. 6

    Roll the Burrito

Fold in the sides of the tortilla and then roll it tightly from the bottom up. Repeat for the remaining tortillas.

  3. 7

    Serve

Cut the burritos in half if desired and serve with extra salsa and sour cream on the side.
