Prepare the Chicken or Beef
Season the chicken breast or beef steak with salt, black pepper, and a tablespoon of olive oil. Let it marinate for at least 15-30 minutes.

Prepare the Vegetables
Wash and chop the fresh spinach, romaine lettuce, tomatoes, red onion, and bell pepper into bite-sized pieces. Place them in a large salad bowl.

Grill the Protein
Preheat the grill to medium-high heat. Grill the marinated chicken or beef for about 6-8 minutes on each side, or until fully cooked. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C) for chicken and 145°F (63°C) for beef.

Combine the Salad
Once the chicken or beef is grilled and rested for 5 minutes, slice it into strips. Add the sliced protein to the bowl of vegetables.

In a separate bowl, whisk together the remaining olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper until well combined.
