Method

Tacos

  1. 1

    Prepare the Tilapia

Season the tilapia fillets with olive oil, lime juice, salt, and black pepper. Allow to marinate for at least 15 minutes.

  2. 2

    Cook the Tilapia

Grill or pan-fry the tilapia fillets over medium heat for about 4-5 minutes per side until cooked through and flaky. Remove from heat and let rest for a minute.

  3. 3

    Prepare the Tacos

Warm the flour tortillas in a dry skillet or microwave until soft. Place a portion of grilled tilapia on each tortilla, then top with shredded cabbage and diced tomatoes.

Seasoned Rice

  1. 4

    Cook the Rice

In a medium saucepan, heat olive oil over medium heat. Add rice and toast for about 2-3 minutes until slightly golden.

  2. 5

    Add Water and Seasonings

Pour in water, garlic powder, onion powder, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.

Charro Beans

  1. 6

    Prepare the Beans

In a medium saucepan, combine canned pinto beans (drained), chopped onion, minced garlic, cumin, and salt. Cook over medium heat for about 10 minutes until heated through.

  2. 7

    Finish with Cilantro

Stir in chopped cilantro just before serving for added freshness.
