Add Seasoning
Once the beef is browned, add the taco seasoning and mix well. Cook for an additional 2-3 minutes until the beef is fully cooked and evenly coated with the seasoning.

Prepare the Vegetables
Slice the onion, bell pepper, and tomato into thin strips.

Grill the Vegetables
In another skillet or grill pan, add a bit of olive oil and heat over medium-high heat. Add the sliced onions and bell peppers, season with salt and black pepper, and cook for about 5-7 minutes until they are tender and slightly charred. Add the tomato for the last 2 minutes of cooking.

Warm the Tortillas
In a dry skillet, warm the flour tortillas over medium heat for about 30 seconds on each side until pliable.

On each tortilla, layer the seasoned ground beef, grilled onions, bell peppers, and tomatoes. Drizzle with ranchero sauce.
