    Prepare the Ingredients

    Cook the ground beef in a skillet over medium heat until browned, then drain excess fat. In a separate skillet, cook the Italian sausage until browned. Shred the cooked chicken breast and set aside.

    Cook the Eggs

    In a bowl, whisk the eggs and scramble them in a non-stick skillet over medium heat until fully cooked. Set aside.

Assembling the Enchiladas

    Prepare the Tortillas

    Warm the corn tortillas in a dry skillet or microwave until soft and pliable.

    Fill the Tortillas

    On each tortilla, place a different filling: one with ground beef, one with shredded chicken, one with scrambled eggs, and one with cooked Italian sausage. Sprinkle cheddar cheese on each before rolling.

    Roll the Enchiladas

    Roll each tortilla tightly and place seam-side down in a baking dish.

Baking

    Add Sauce and Cheese

    Pour enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle additional cheddar cheese on top.

    Bake the Enchiladas

    Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes, or until the cheese is melted and bubbly.

Serving
