Preparation of Fillings
Prepare Chicken Filling
In a medium bowl, combine the shredded chicken and half of the enchilada sauce. Mix well and set aside.
Prepare Beef Filling
In another bowl, cook the ground beef over medium heat until browned. Drain excess fat and set aside.
Assembly of Enchiladas
Preheat Oven
Preheat the oven to 375°F (190°C).
Assemble Chicken Enchilada
Take one corn tortilla and fill it with the chicken mixture, then roll it up and place it seam-side down in a baking dish.
Assemble Beef Enchilada
Repeat the process with another tortilla, using the beef mixture this time.
Assemble Cheese Enchilada
For the cheese enchilada, fill a tortilla with shredded cheese, roll it up, and place it in the baking dish.
Saucing and Baking
Add Sauces
Pour the remaining enchilada sauce over the chicken enchilada, the cheese sauce over the cheese enchilada, and the green sauce over the beef enchilada.
Bake Enchiladas
Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
Finish Baking
Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Prepare Sides
While the enchiladas are baking, prepare the sides of rice and refried beans.
Plate and Serve
Once the enchiladas are done, serve them hot with a side of rice and refried beans.
