Tacos

Prepare the Ground Beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning and follow package instructions to mix with water, simmering for about 5 minutes.

Assemble the Tacos
Warm the corn tortillas in a dry skillet or microwave. Fill each tortilla with the seasoned ground beef, then top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
Bean Burrito

Prepare the Filling
In a bowl, mix the refried beans with half a cup of salsa and half a cup of shredded cheese until well combined.

Assemble the Burritos
Warm the flour tortillas. Place a generous scoop of the bean mixture in the center of each tortilla. Roll up tightly and place seam-side down on a plate. Top with remaining salsa and cheese.
Enchiladas

Prepare the Enchiladas
Preheat the oven to 350°F (175°C). In a bowl, mix the shredded chicken with half of the enchilada sauce. Fill corn tortillas with the chicken mixture, roll them up, and place them seam-side down in a baking dish.

Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese. Bake for 20-25 minutes until heated through and cheese is bubbly.
Cheese Quesadilla

Assemble the Quesadillas
Place a tortilla in a skillet over medium heat. Sprinkle half of the shredded cheese over the tortilla, then top with another tortilla. Cook until golden brown on both sides.

Remove from skillet, cut into wedges, and serve with salsa.
Lunch Nachos Deluxe

Preheat the oven to 350°F (175°C). On a large baking sheet, spread the tortilla chips evenly. Top with refried beans, shredded cheese, and jalapenos.

Bake in the preheated oven for about 10 minutes or until the cheese is melted. Serve hot with salsa on the side.
