Prepare the Tortillas
Cut each corn tortilla into six equal wedges to form chips.

Heat the Oil
In a large pot or deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of tortilla in the oil; if it sizzles, it’s ready.

Fry the Chips
Carefully add the tortilla wedges to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 2-3 minutes or until golden and crisp. Use a slotted spoon to remove the chips and place them on paper towels to drain excess oil.

Cool and Season
Allow the chips to cool slightly before serving. You can sprinkle them with salt while they are still warm, if desired.

Combine the Ingredients
In a mixing bowl, combine the diced tomatoes, red onion, jalapeño pepper, and chopped cilantro.

Add Seasonings
Add lime juice, salt, and garlic powder to the mixture. Stir well to combine all ingredients.

Let it Rest
Let the salsa sit for at least 15 minutes at room temperature to allow the flavors to meld before serving.
