Cheese Dip

Prepare the Cheese Dip
In a medium saucepan, combine the cream cheese, cheddar cheese, monterey jack cheese, and sour cream over medium heat.

Add Seasonings
Stir in the chopped jalapeños, garlic powder, onion powder, cumin, salt, and black pepper. Mix well until the cheeses are melted and the mixture is smooth.

Adjust Consistency
If the cheese dip is too thick, gradually add the milk while stirring until you reach your desired consistency.

Keep Warm
Reduce heat to low and keep the cheese dip warm until ready to serve.
Enchilada

Prepare the Enchiladas
Preheat your oven to 350°F (175°C). Take a corn tortilla and spread a tablespoon of refried beans or black beans in the center.

Roll the Tortillas
Roll the tortilla tightly around the filling and place it seam-side down in a baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Pour the enchilada sauce evenly over the rolled tortillas and sprinkle shredded cheese on top.

Bake
Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden.
Rice

Cook the Rice
In a medium pot, combine the white rice, water, and salt. Bring to a boil over high heat.

Simmer
Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.

Remove from heat and let sit for 5 minutes. Fluff the rice with a fork before serving.
