Mousse Preparation

    Melt the Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a pot of simmering water (double boiler method) or in the microwave, stirring occasionally until smooth. Allow it to cool slightly.

    Whip the Cream

    In a large mixing bowl, whip the heavy cream until it forms soft peaks. Be careful not to over-whip, as you want it to remain light and airy.

    Prepare Egg Whites

    In another clean bowl, whisk the egg whites until they become frothy. Gradually add the sugar while continuing to whisk until stiff peaks form.

    Combine Ingredients

    Gently fold the melted chocolate into the whipped cream until well combined. Then, fold in the egg whites in three additions, being careful not to deflate the mixture. Add vanilla extract and fold until just combined.

    Chill the Mousse

    Spoon the mousse mixture into individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours, or until set.

Topping Preparation

    Prepare the Topping

    Once the mousse has set, whip the cream for the topping until soft peaks form. Spoon or pipe the whipped cream over the chilled mousse.

    Add Chocolate Shavings

    Sprinkle chocolate shavings over the whipped cream for a decorative finish.
