Lobster Preparation

    Prepare the Lobster

    Bring a pot of salted water to a boil. Add the lobster tails and cook for 6-8 minutes until bright red and cooked through. Remove from water and let cool.

    Extract Lobster Meat

    Once cool, carefully split the lobster tails and extract the meat. Cut the meat into bite-sized pieces and set aside.

Frite Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips to resemble fries. Soak in water for 30 minutes to remove excess starch, then drain and pat dry.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the potato strips in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.

Aïoli Preparation

    Mix Aïoli Ingredients

    In a mixing bowl, combine mayonnaise, lemon juice, minced jalapeno, minced garlic, salt, and black pepper. Stir well until smooth and set aside.

Pickled Onion Preparation

    Make Pickled Onions

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a simmer until the sugar and salt dissolve. Remove from heat and pour over the sliced red onions in a jar. Let cool before refrigerating for at least 1 hour.

Assembly

    Assemble the Dish

    On a serving plate, arrange the crispy lobster frites. Top with pieces of lobster meat, a side of lemon jalapeno aïoli, and garnish with pickled onions.
