Preparing the Lamb Chops

    Marinate the Lamb

    In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub the mixture all over the lamb chops and let them marinate for at least 30 minutes at room temperature.

    Preheat the Grill

    Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

    Grill the Lamb Chops

    Place the marinated lamb chops on the grill and cook for about 4-5 minutes per side for medium-rare, or until your desired doneness is achieved. Remove from the grill and let rest for 5 minutes.

Making the Rosemary Jus

    Collect the Drippings

    After grilling the lamb chops, pour the drippings from the grill into a saucepan. This will be the base for your jus.

    Deglaze the Pan

    Add red wine to the saucepan over medium heat, scraping up any browned bits from the bottom. Bring to a simmer and let it reduce by half.

    Add Broth and Herbs

    Stir in beef broth and fresh rosemary. Continue to simmer for another 10 minutes to allow the flavors to meld.

    Finish the Jus

    Whisk in the butter until melted and smooth. Strain the sauce to remove the rosemary leaves and any solids. Season with salt and pepper to taste.
