Prepare the oysters
Rinse the fresh oysters under cold running water to remove any grit. Pat them dry with a clean towel.

Make the batter
In a large bowl, mix all-purpose flour, cornstarch, Korean red pepper flakes, salt, and black pepper until well combined.

Fry the oysters
Dredge each oyster in the prepared batter, shaking off any excess. Carefully place the battered oysters into the hot oil. Fry in batches for about 3-4 minutes or until golden brown and crispy. Remove the oysters and drain on paper towels.

Prepare the daikon vinaigrette
In a bowl, combine the julienned daikon radish, rice vinegar, soy sauce, sesame oil, and sugar. Toss well and let sit for about 10 minutes to allow the flavors to meld.

Plate the dish
On a serving platter, arrange the fried oysters. Top each oyster with a dollop of crème fraîche, a spoonful of kimchi, and a small amount of caviar. Drizzle the daikon vinaigrette over the oysters before serving.
