Preparing the Steak

Season the Filet Mignon
Take the filet mignon pieces and pat them dry with paper towels. Season both sides generously with salt and black pepper.

Heat the Pan
In a large skillet, heat the olive oil over medium-high heat until it's shimmering but not smoking.

Sear the Steak
Add the filet mignon to the hot skillet. Sear for about 4-5 minutes on one side until a crust forms. Flip the steaks.

Add Flavor
After flipping, add the butter, garlic cloves, and fresh thyme to the pan. Continuously spoon the melted butter over the steaks for about 3-4 minutes for medium-rare doneness.

Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130°F (54°C).

Remove the filet mignon from the skillet and place them on a cutting board. Let them rest for at least 5 minutes before slicing.
