Method

Preparing the Filet

    Season the Filets

    Take the filet mignon pieces and pat them dry with a paper towel. Drizzle olive oil over both sides of the filets. Sprinkle salt and black pepper evenly on both sides. Let them sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

    Prepare Garlic and Rosemary

    While the filets are resting, peel and crush the garlic cloves with the flat side of a knife. Set aside. Rinse the rosemary under cold water and pat dry.

Grilling the Filet

    Preheat the Grill

    Preheat your grill to high heat (about 450-500°F or 232-260°C). Make sure the grill grates are clean and well-oiled to prevent sticking.

    Grill the Filets

    Once the grill is hot, place the filets on the grill. Cook for about 4-5 minutes on one side without moving them. This will create a nice sear. Flip the filets and add the crushed garlic and rosemary on top. Grill for another 4-5 minutes for medium-rare (adjust time for desired doneness).

    Rest the Filets

    Remove the filets from the grill and place them on a cutting board. Cover them loosely with aluminum foil and let them rest for about 5-10 minutes. This allows the juices to redistribute.

Preparing Optional Sides

    Cook Asparagus

    While the filets are resting, rinse the asparagus and trim the tough ends. In a skillet, add butter and melt over medium heat. Add the asparagus and cook for about 3-4 minutes until tender, stirring occasionally.

    Serve

    Plate the grilled filets alongside the sautéed asparagus. Optionally, squeeze fresh lemon juice over the asparagus before serving.
