Method

Cocoa Rubbed Red Deer

    Prepare the Cocoa Rub

    In a small bowl, mix together cocoa powder, brown sugar, smoked paprika, garlic powder, salt, and black pepper.

    Rub the Meat

    Pat the red deer loin dry with paper towels and rub the cocoa mixture all over the meat. Allow it to marinate for at least 30 minutes at room temperature.

    Sear the Meat

    Heat olive oil in a skillet over medium-high heat. Sear the red deer loin for 3-4 minutes on each side until browned, then transfer to a preheated oven at 180°C (350°F) and roast for 10-15 minutes or until the internal temperature reaches 60°C (140°F) for medium-rare.

    Rest and Slice

    Remove from the oven, let rest for 5 minutes, then slice and set aside.

    Preheat Oven

    Preheat your oven to 180°C (350°F). Grease a baking dish with butter.

    Mix Dry Ingredients

    In a large bowl, combine cornmeal, baking powder, and salt.

    Mix Wet Ingredients

    In another bowl, whisk together milk, eggs, and melted butter.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until combined. Fold in sweet corn kernels.

    Bake

    Pour the batter into the prepared baking dish and bake for 30-35 minutes until golden brown and set.

Grilled Poblano Soubise

    Grill the Poblanos

    Char the poblano peppers on a grill until the skin is blistered. Place them in a bowl covered with plastic wrap for 10 minutes, then peel off the skin and chop.

    Cook the Onion and Garlic

    In a saucepan, heat olive oil over medium heat, add chopped onion and minced garlic, and sauté until translucent.

    Blend Ingredients

    Add the grilled poblanos to the saucepan, along with heavy cream and salt. Simmer for 5 minutes, then blend until smooth.

Apple, Baby Arugula & Pecan Salad

    Prepare the Salad Ingredients

    In a large bowl, combine baby arugula, sliced apple, and pecans.

    Make the Dressing

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.

    Toss the Salad

    Drizzle the dressing over the salad and toss gently to combine.
