Cocoa Rubbed Red Deer

    Prepare the Rub

    In a small bowl, mix together cocoa powder, brown sugar, smoked paprika, garlic powder, salt, and black pepper.

    Rub the Meat

    Pat the red deer loin dry with paper towels. Rub the olive oil over the meat, then apply the cocoa mixture evenly over the surface.

    Grill the Meat

    Preheat a grill to medium-high heat. Grill the red deer loin for about 5-7 minutes on each side or until it reaches your desired doneness. Let it rest for 10 minutes before slicing.

    Preheat Oven

    Preheat your oven to 400°F (200°C) and grease an 8-inch square baking dish with butter.

    Combine Dry Ingredients

    In a large bowl, whisk together cornmeal, baking powder, and salt.

    Mix Wet Ingredients

    In another bowl, whisk together milk and eggs. Melt the butter and add it to the wet mixture.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in sweet corn kernels.

    Pour the mixture into the prepared baking dish and bake for 30-35 minutes or until the top is golden and a toothpick comes out clean.

Grilled Poblano Soubise

    Grill the Peppers

    Preheat the grill. Grill the poblano peppers until charred on all sides, about 10-15 minutes. Remove from grill and let cool.

    Sauté the Onion

    In a skillet, melt the butter over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

    Blend the Ingredients

    Peel and chop the cooled poblano peppers. In a blender, combine grilled poblanos, sautéed onion, and heavy cream. Blend until smooth. Season with salt.

Apple, Baby Arugula & Pecan Salad

    Prepare the Salad

    In a large bowl, combine baby arugula, sliced apple, and chopped pecans.

    Make the Dressing

    In a small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper to taste.

    Dress the Salad

    Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
