Preparation

    Clean the Chicken Livers

    Rinse the chicken livers under cold running water and remove any visible fat or connective tissue. Pat them dry with paper towels.

    Sauté Onion and Garlic

    In a large skillet, melt 50g of the unsalted butter over medium heat. Add the finely chopped onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and fresh thyme leaves, and cook for another minute until fragrant.

    Cook the Chicken Livers

    Increase the heat to medium-high and add the cleaned chicken livers to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the livers are browned on the outside but still slightly pink in the center.

    Deglaze the Pan

    Pour in the brandy or cognac, scraping the bottom of the skillet to release any browned bits. Allow the alcohol to cook off for about 2 minutes.

    Add Cream and Seasonings

    Lower the heat and stir in the heavy cream, salt, and black pepper. Stir well and cook for an additional 2-3 minutes until everything is heated through.

Blending and Serving

    Blend the Mixture

    Transfer the mixture to a food processor and add the remaining 50g of butter. Blend until smooth and creamy. Taste and adjust seasoning if necessary.

    Spoon the paté into a serving dish or individual ramekins. Cover with plastic wrap and refrigerate for at least 2 hours or until firm.
