Salad Preparation

Prepare the Tomatoes
Wash the heirloom tomatoes thoroughly under running water. Pat them dry with a clean kitchen towel. Cut the tomatoes into thick slices.

Prepare the Mozzarella
Slice the fresh mozzarella into thick rounds, similar in size to the tomato slices.

Assemble the Salad
On a large serving platter, alternate layers of tomato slices and mozzarella slices, creating a beautiful pattern. Tuck fresh basil leaves in between the layers.
Balsamic Reduction Preparation

Make the Balsamic Reduction
In a small saucepan, combine 1 cup of balsamic vinegar and 1 tablespoon of honey. Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer until it has thickened, about 10-15 minutes. Stir occasionally to prevent burning.

Cool the Reduction
Once thickened, remove the saucepan from the heat and let it cool for a few minutes. The reduction will continue to thicken as it cools.

Season the Salad
Drizzle the balsamic reduction over the assembled salad. Sprinkle with salt and black pepper to taste.

Serve immediately as a refreshing appetizer or side dish.
