Preparing the Blackened Top Sirloin

    Season the Steak

    In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub this spice mixture generously over both sides of the top sirloin steaks.

    Heat the Oil

    Heat a heavy skillet or cast-iron pan over medium-high heat. Add olive oil and allow it to get hot, just until it begins to shimmer.

    Cook the Steak

    Once the oil is hot, carefully place the seasoned steaks in the skillet. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Avoid moving the steaks around to ensure a proper sear.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a plate for at least 5 minutes before serving.

Making the Stilton Butter

    Soften the Butter

    Take the stick of unsalted butter out of the refrigerator and let it soften at room temperature for about 30 minutes.

    Mix the Ingredients

    In a bowl, combine the softened butter, crumbled Stilton cheese, chopped fresh chives, and lemon juice. Mix well until all ingredients are thoroughly combined.

    Transfer the butter mixture onto a piece of parchment paper. Roll it into a log shape and twist the ends to seal. Chill in the refrigerator until firm, about 1 hour.
