Preparation

Prepare the Pasta
In a large pot, bring salted water to a boil. Add buccatini pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Seafood
Season the barramundi fillets with salt and black pepper. In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook the barramundi for about 4-5 minutes on each side until golden and cooked through. Remove from the skillet and keep warm.

Make the Butter Sauce
In the same skillet, add the remaining tablespoon of olive oil and melt the butter over medium heat. Add the minced garlic and sliced leeks. Sauté for about 3-4 minutes until the leeks are soft.

Add Sundried Tomatoes and Seafood
Stir in the chopped sundried tomatoes and cook for another 2 minutes. Add the shrimp and calamari to the skillet, cooking until the shrimp turns pink and the calamari is opaque, about 3-4 minutes.
