Preparation

    Prepare the Pasta

    In a large pot, bring salted water to a boil. Add buccatini pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Seafood

    Season the barramundi fillets with salt and black pepper. In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook the barramundi for about 4-5 minutes on each side until golden and cooked through. Remove from the skillet and keep warm.

Sauce Preparation

    Make the Butter Sauce

    In the same skillet, add the remaining tablespoon of olive oil and melt the butter over medium heat. Add the minced garlic and sliced leeks. Sauté for about 3-4 minutes until the leeks are soft.

    Add Sundried Tomatoes and Seafood

    Stir in the chopped sundried tomatoes and cook for another 2 minutes. Add the shrimp and calamari to the skillet, cooking until the shrimp turns pink and the calamari is opaque, about 3-4 minutes.

    Combine Pasta and Sauce

    Add the cooked buccatini pasta to the skillet, tossing to coat in the sauce. Add lemon juice and chopped parsley. Mix well, adjusting salt and pepper to taste.

Serving

    Plate and Serve

    Divide the pasta and seafood mixture among plates. Top with the cooked barramundi fillets. Garnish with additional parsley and lemon wedges if desired.
