Assemble the Enchiladas
On a flat surface, dip each corn tortilla in the desired enchilada sauce (red or green) to soften. Place about 1/4 cup of sautéed chicken and a sprinkle of cheese in the center of each tortilla, roll them up, and place seam side down in a greased baking dish.

Add Sauce and Cheese
Once all enchiladas are in the baking dish, pour the remaining enchilada sauce (either red or green, depending on your choice) over the top. Sprinkle the remaining cheese evenly on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Remove from the oven, let cool for a few minutes, then garnish with sour cream and chopped cilantro. Serve warm.
