    Prepare the Eggs

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Whisk the eggs with salt and black pepper, then pour into the skillet. Cook until the eggs are scrambled and fluffy, about 3-4 minutes.

    Sauté the Spinach

    In the same skillet, add the remaining olive oil and toss in the fresh spinach. Sauté until wilted, about 2 minutes.

    Add Tomatoes and Feta

    Add halved cherry tomatoes and crumbled feta cheese to the spinach. Stir gently and cook for another 2 minutes.

    Toast the Bread

    While the eggs are cooking, toast the whole grain bread slices until golden brown.

    Prepare the Avocado

    Slice the avocado and season with salt and a sprinkle of fresh herbs.

    Assemble the Plate

    On each plate, serve the scrambled eggs with sautéed spinach, tomatoes, and feta. Add the toasted bread and avocado slices. Garnish with additional fresh herbs.
