Combine Ingredients
In a cocktail shaker, combine Pisco, fresh lime juice, simple syrup, and egg white.

Dry Shake
Shake the mixture without ice for about 15 seconds to emulsify the egg white.

Shake with Ice
Add ice cubes to the shaker and shake again for another 15-20 seconds until well chilled.

Strain
Strain the mixture into a chilled coupe glass.

Add Bitters
Add 2 dashes of Angostura bitters on top of the cocktail.

Garnish
Garnish with a lime wheel on the rim of the glass.
