Rinse quinoa under cold water. In a medium pot, combine quinoa and 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until water is absorbed. Remove from heat and let it stand for 5 minutes. Fluff with a fork.

While quinoa is cooking, chop cherry tomatoes, cucumber, and parsley. Halve the cherry tomatoes, dice the cucumber, and finely chop the parsley.
