    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

    Season the Steak

    Generously season both sides of the ribeye steaks with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Cook the Steak

    Add the steaks to the hot skillet. Cook for 4-5 minutes on one side for medium-rare, then flip and cook for another 3-4 minutes on the other side. If desired, add rosemary during the last minute of cooking.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5 minutes before serving.

Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and chop the russet potatoes into equal-sized chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.

    Cook the Garlic

    In the last 5 minutes of boiling, add the garlic cloves to the pot to soften.

    Mash the Potatoes

    Drain the potatoes and garlic, then return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Seasonal Vegetables

    Prepare the Vegetables

    Wash and chop the seasonal vegetables into bite-sized pieces.

    Sauté the Vegetables

    In a separate skillet, heat the olive oil over medium heat. Add the vegetables and sauté for about 5-7 minutes until tender. Season with salt and black pepper to taste.
