Cooking Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add 8 cups of pasta and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain and Rinse
Once cooked, drain the pasta in a colander and rinse briefly under cold water to stop the cooking process. Set aside.
Preparing Vegetables

Sauté the Vegetables
In a large skillet over medium heat, add 3 tablespoons of olive oil. Once hot, add the sliced bell pepper, zucchini, and carrot. Sauté for about 5 minutes or until they start to soften.

Add Broccoli and Spinach
Next, add the broccoli florets and fresh spinach to the skillet. Cook for an additional 3-4 minutes until the spinach wilts and broccoli is tender.

Add Cherry Tomatoes
Stir in the halved cherry tomatoes and cook for another 2 minutes until they are slightly soft.
Making the Sauce

Add Garlic and Seasoning
Add the minced garlic and red pepper flakes to the skillet with the vegetables. Sauté for another minute until fragrant. Season with salt and black pepper.

Serve with Parmesan
Remove from heat and sprinkle the grated Parmesan cheese over the dish. Toss to combine and serve immediately.
