Preparing the Calamari

    Clean the Calamari

    Begin by cleaning the fresh calamari. Remove the head and innards, and peel off the skin. Rinse the calamari under cold water and cut it into rings.

    Prepare the Breading

    In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, whisk together the eggs and milk.

    Coat the Calamari

    Dip each calamari ring first into the egg mixture, allowing excess to drip off, then coat it in the flour mixture. Set aside on a plate.

Making the Marinara Sauce

    Sauté the Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Pour in the canned crushed tomatoes and add dried oregano, dried basil, salt, black pepper, red pepper flakes, and sugar. Stir to combine.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Frying the Calamari

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

    Fry the Calamari

    Carefully add a few calamari rings to the hot oil, ensuring not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Serve the fried calamari hot with the marinara sauce on the side for dipping.
