Method
Cake Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C). This ensures that the oven is hot enough to create the lava effect.
- 2
- 3
Melt Chocolate and Butter
In a microwave-safe bowl, combine the semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each until melted and smooth.
- 4
Mix Egg Mixture
In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture becomes thick and pale in color.
- 5
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously until fully combined.
- 6
Add Flour and Vanilla
Sift the flour into the chocolate mixture and add the vanilla extract and a pinch of salt. Carefully fold the mixture until just combined, avoiding overmixing.
- 7
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 8
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, while the center remains soft.
- 9
Cool Slightly
Remove the ramekins from the oven and let them cool for 1-2 minutes. This will help the cakes to set slightly.
- 10
Serve
Carefully invert each ramekin onto a dessert plate, allowing the lava cake to slide out. Serve immediately with a scoop of vanilla ice cream on the side.
