Calamari Preparation

Clean and Prepare Calamari
Rinse the fresh calamari under cold water to clean it. Remove the head and innards, then slice the body into rings. Pat dry with paper towels.

Prepare the Breading
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Dredge the Calamari
Dip the calamari rings first into the egg mixture, allowing excess to drip off, then coat them in the flour mixture. Shake off any excess flour.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari to the hot oil in batches. Fry for about 2-3 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally.

Add Fresh Basil
Tear fresh basil leaves and stir them into the sauce just before serving.
