1. Prepare oranges
Wash the oranges. Zest one orange until you have about 1 tablespoon of zest, then juice the oranges to yield about 1 cup (240 ml) of fresh orange juice. Strain the juice through a fine mesh sieve to remove pulp and seeds if you prefer a clear soda.
2. Make orange syrup
In a small saucepan combine the fresh orange juice, granulated sugar, corn syrup (if using), orange zest, and 2 tablespoons (30 ml) cold water. Stir to combine. Place the saucepan over medium heat and bring just to a gentle simmer while stirring to dissolve the sugar completely. Do not boil vigorously — simmer 2 minutes to meld flavors and slightly concentrate the juice.
3. Finish and cool syrup
Remove from heat and stir in 1 teaspoon fresh lemon juice to brighten flavor. Taste and adjust sweetness: if too tart, add up to 1 additional tablespoon sugar while still warm and stir until dissolved. Allow the syrup to cool to room temperature (about 20–30 minutes). For a clearer syrup, strain out the zest through a fine mesh sieve as you transfer the syrup to a container. The syrup can be refrigerated up to 5 days.

4. Assemble the soda
Fill two tall glasses with ice (about 1/2 cup ice per glass). Measure 2 to 3 tablespoons of the cooled orange syrup into each glass (use 2 tablespoons for a lighter flavor, 3 for a stronger orange taste).
