Main Ingredients

Method

Preparation

  1. 1

    Prepare the Tomatillos

Remove the husks from the tomatillos and rinse them under cold water to remove any sticky residue. Cut them in half.

  2. 2

    Prepare the Peppers

Slice the jalapeño peppers in half and remove the seeds for less heat, if desired. You can keep the seeds if you prefer a spicier sauce.

  3. 3

    Chop the Onion and Garlic

Peel the onion and chop it into quarters. Peel the garlic cloves and leave them whole.

  4. 4

    Chop the Cilantro

Wash the cilantro thoroughly, shake off excess water, and chop it roughly.

Cooking

  1. 5

    Roast the Ingredients

Preheat your oven to 400°F (200°C). Place the tomatillos, jalapeños, onion quarters, and garlic cloves on a baking sheet. Drizzle with a little olive oil and sprinkle with salt and pepper. Roast in the oven for about 20-25 minutes, or until the tomatillos are soft and slightly charred.

  2. 6

    Blend the Sauce

Allow the roasted ingredients to cool slightly, then transfer them to a blender. Add the chopped cilantro and lime juice. Blend until smooth. Taste and adjust the seasoning with more salt and pepper if needed.
