Remove the husks from the tomatillos and rinse them under cold water to remove any sticky residue. Cut them in half.

Slice the jalapeño peppers in half and remove the seeds for less heat, if desired. You can keep the seeds if you prefer a spicier sauce.

Peel the onion and chop it into quarters. Peel the garlic cloves and leave them whole.

Wash the cilantro thoroughly, shake off excess water, and chop it roughly.

Preheat your oven to 400°F (200°C). Place the tomatillos, jalapeños, onion quarters, and garlic cloves on a baking sheet. Drizzle with a little olive oil and sprinkle with salt and pepper. Roast in the oven for about 20-25 minutes, or until the tomatillos are soft and slightly charred.
