Soak Potato Slices
Place the potato slices in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.
Frying

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a deep-frying thermometer for accuracy.

Dry Potato Slices
After soaking, drain the potato slices and pat them dry with paper towels. Make sure they are as dry as possible to prevent oil splatter.

Fry the Chips
Working in small batches, carefully add the potato slices to the hot oil, ensuring not to overcrowd the pot. Fry for about 3-4 minutes or until the chips turn golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. While still warm, sprinkle the chips with salt, paprika, garlic powder, and onion powder to taste.
