Coleslaw Preparation

Prepare the coleslaw
In a large mixing bowl, combine the shredded green cabbage and grated carrots.

Add dressing ingredients
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Pour the dressing over the cabbage and carrots mixture. Toss until the vegetables are well-coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Assembly of the Sandwich

Prepare the bread
Take two slices of whole grain sandwich bread for each sandwich.

Layer the ingredients
On one slice of bread, lay down 2 oz of plant-based turkey slices, followed by a slice of provolone cheese.

Add coleslaw and dressing
Spoon a generous amount of prepared coleslaw on top of the cheese. Drizzle with Russian dressing and add additional mayonnaise if desired.

Finish the sandwich
Top with the second slice of bread. Press down gently to secure the filling.

Serve
Cut the sandwich in half if desired, and serve immediately.
