Turkey Preparation

Prepare the Turkey
Preheat your oven to 325°F (165°C). Rinse the turkey under cold water and pat it dry with paper towels. Rub the olive oil all over the turkey, ensuring it's well coated.

Season the Turkey
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, rosemary, and thyme. Rub this seasoning blend generously all over the turkey, including inside the cavity.

Roast the Turkey
Place the turkey on a roasting rack in a large roasting pan. Roast in the preheated oven for approximately 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C). Baste the turkey with its juices every 30 minutes.

Rest the Turkey
Once cooked, remove the turkey from the oven and let it rest for at least 30 minutes before pulling the meat apart.

Prepare the Ingredients
While the turkey is resting, wash the lettuce and slice the tomatoes and red onion.

Pull the Turkey
Using your hands or two forks, shred the turkey meat into bite-sized pieces.

Assemble the Sandwich
Take a bread roll or slice and spread a generous amount of mayonnaise on one side. Layer with pulled turkey, provolone cheese, lettuce, tomato slices, and red onion. Top with another piece of bread or the other half of the roll.

Serve the sandwiches immediately while the turkey is warm, or wrap them up for a delicious meal later.
