    Prepare the Ingredients

    Thinly slice the ribeye steak against the grain into strips. Dice the onion and slice the mushrooms. If using, slice the hot and sweet peppers.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Then add the sliced mushrooms and cook for another 3-4 minutes until they are tender. If using, add the sliced hot or sweet peppers and sauté for an additional 2 minutes. Season with salt and black pepper to taste.

Cooking the Steak

    Cook the Steak

    In the same skillet, push the sautéed vegetables to the side and add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the sliced ribeye steak. Cook for about 5-7 minutes, stirring frequently until the steak is browned and cooked to your desired doneness.

    Add the Cheese

    Once the steak is cooked, reduce the heat to low and evenly distribute the white American cheese over the steak and vegetable mixture. Cover the skillet with a lid and allow the cheese to melt for about 2-3 minutes.

Assembling the Sandwiches

    Prepare the Rolls

    While the cheese is melting, slice the submarine rolls in half lengthwise without cutting all the way through. Optionally, you can toast the insides of the rolls on a skillet or in an oven until lightly golden.

    Build the Cheesesteaks

    Once the cheese has melted, remove the skillet from heat. Using a spatula, scoop the steak and cheese mixture and fill each prepared roll generously. Serve immediately.
