Method

Preparing the Filling

  1. 1

    Cook the Meat

In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

  2. 2

    Add Chicken and Vegetables

Add the shredded chicken, chopped onion, minced garlic, chili powder, cumin, salt, and black pepper to the skillet. Cook for an additional 3-4 minutes until the onions are translucent.

  3. 3

Mix in Refried Beans and Cheese

Stir in the refried beans and shredded cheese until well combined and heated through, about 2 minutes. Remove from heat and set aside.

Assembling the Chimichangas

  1. 4

    Prepare the Tortillas

Warm the flour tortillas in a microwave for about 30 seconds to make them pliable.

  2. 5

    Fill the Tortillas

Place about 1/2 cup of the filling mixture in the center of each tortilla. Fold the sides over the filling and then roll from the bottom up to form a burrito shape.

Frying the Chimichangas

  1. 6

    Heat the Oil

In a deep skillet or frying pan, heat the oil over medium heat until it reaches 350°F (175°C).

  2. 7

    Fry the Chimichangas

Carefully place the chimichangas in the hot oil, seam side down. Fry for about 4-5 minutes on each side, or until golden brown and crispy.

  3. 8

    Drain the Chimichangas

Remove the chimichangas from the oil and place them on a plate lined with paper towels to drain excess oil.

Serving Suggestions

  1. 9

    Plate and Serve

Serve the chimichangas hot, topped with sour cream, guacamole, and salsa if desired.
