Prepare Salad Base

    Wash and chop mixed greens

    Thoroughly wash the mixed greens under cold water and pat dry with a clean kitchen towel or use a salad spinner. Place the greens in a large mixing bowl.

    Prepare vegetables

    Halve the cherry tomatoes and add them to the bowl. Peel and slice the cucumber into thin rounds, grate the carrots, and finely slice the red onion. Add all the chopped vegetables to the bowl with the mixed greens.

    Include toppings

    Add the feta cheese, olives, and croutons over the salad base. If using, slice the grilled chicken and avocado, and add them on top of the salad.

Make Dressing

    Prepare the dressing

    In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until well combined.

Serve

    Combine and serve

    Drizzle the dressing over the salad just before serving and toss gently to combine the ingredients. Serve immediately for the best freshness.
