Prepare the Wagyu Roast
Preheat your oven to 250°F (121°C). Rub the American Wagyu beef roast with salt, black pepper, and garlic powder evenly on all sides.

Roasting the Beef
Place the seasoned roast on a roasting rack in a baking pan. Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 3 to 4 hours.

Resting the Roast
Once the desired temperature is reached, remove the roast from the oven, cover it loosely with aluminum foil, and let it rest for at least 30 minutes to allow the juices to redistribute.

Prepare the Vegetables
While the roast is resting, slice the tomato and onion. Wash and dry the lettuce leaves.

After the roast has rested, slice it thinly against the grain.

Assemble the Sandwiches
On each sub roll or baguette, spread a generous amount of mayonnaise. Layer the sliced Wagyu roast, followed by provolone cheese, lettuce, tomato slices, and onion slices.
